The Proper Temperature For Wine Barrel And Bottle Storage

The wine industry has done significant testing over the years and have come to the conclusion that a constant temperature between 55 °F and 60 °F (13.0 °C and 15.5 °C) is optimal for wine storage and aging. The moderate climate in Northern California results in uniform air temperatures underground, usually about 58 °F (14.5 °C), which is the optimal temperature for wine caves.

In the wine growing regions in many areas of California land is scarce and the values are high. Therefore non-agricultural development is often restricted which limits the building of storage warehouses. Hence the need in Northern California for wine storage caves and there are an estimated 130 to 150 caves which are used for wine aging, barrel storage, and tasting rooms.
